The Holiday Drink – The Method

We present a simplified interpretation of a drink featured on our latest drinks list. It's a party-sized premix which is loaded with the essence of a Christmas time, which makes it excellent for a festive gathering. Reserve the remaining citrus syrup to use in morning drinks, sweets, or to mix another batch of this cocktail.

Serves 10 guests

To make the Clementine Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

For the Drink (yields 850ml, serving 10)

400ml good quality vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine syrup (see above)
A few cranberries, to garnish

For the Syrup: Place all the items into a pot, bring to a gentle boil, mixing until the sugar dissolves. Next, take off the burner allowing it to cool down completely. Decant into an clean bottle, close it and store in the fridge, it can be stored for up to four weeks.

To make Premix: Combine all the liquids in a big jug, leave to sit for 60 minutes, then filter it best through cheesecloth, making it perfectly clear.

To serve: Pour 85ml from the batch mix into a stirring glass filled with ice, gently stirring lightly for a minute to chill. Pour to a cold coupe glass or equivalent, top with a few cranberries adding the final touch by giving it a light spray with the mandarin essence over the drink.
